Cocoa Cake with Flavored Black Tea




Ingredients:
2 eggs, 90g of rice oil, 150g of black tea flavoured with strawberries,cherries,rasberry and redcurrants (Twinings four red fruits tea), 70g of fructose, 25g of cocoa powder, 1 sachet of baking powder for microwave oven, 2g of cinnamon powder, 80g of potato starch, 90g of almond flour.

Method:
Infuse the black flavoured tea for 5 mins and pause till it gets cool.
In a bowl put: cinnamon, baking powder, fructose, cocoa powder, potato starch, almond flour.
Whisk the egg in a bowl and add the rice oil. Then add the four red fruits tea and keep whisking.
Add this liquid mixture in the first bowl, and mix until you get a homogeneous and dense mixture.
Pour it in a buttered glass baking tray with 24 cm diameter.
Bake in microwave oven with grill for 6 minutes, and only microwave for 6 minutes.
Once is baked, leave the cake cool down.
Then, you can pour the ganache over the cake. Leave it rest for about 2 hours and serve.

Hint:
Cut it horizontally and spread it with the cream you prefer.
